Low Carb Pancakes with Peanut Butter
Ingredients (for 4 small pancakes):
For the pancakes:
• 2 eggs
• 1 ripe banana
• 2 tablespoons almond flour
• 1 teaspoon baking powder
• 1/2 teaspoon cinnamon (optional)
• 1 pinch of salt
• Coconut oil to grease the pan
For the topping:
• 1 tablespoon of 100% natural peanut butter
• Banana, strawberry and nuts (optional)
Preparation:
• Mash the banana with a fork in a bowl.
• Add the eggs and mix well.
• Add the almond flour, yeast, cinnamon and salt. Stir until the batter is smooth.
• Over a medium heat, grease a non-stick frying pan with a little coconut oil.
• Pour portions of the batter (about 2 tablespoons each) into the pan. Cook for 2-3 minutes on each side, until golden brown.
• Serve the pancakes with the peanut butter topping and garnish with fruit of your choice and some nuts.
